Open Settings → Appearance → Theme and choose Same as system (the default), Light or Dark.
Risk levels keep their meaning in both themes and are always shown with an icon and a word as well as a colour, so they're readable for everyone, including people with colour blindness.
Text size follows your phone's display settings (Settings → Display → Font size).
